The main components of the fungus are polysaccharides and erythadenine. Shiitake mushroom is also rich in B vitamins, vitamins C and E, minerals (phosphorus, manganese, zinc, iron, magnesium, potassium), fibre, amino acids, alkaloids, phenolics and diterpenoids.
