Cocoa beans, which contain more than 300 active substances including phenyl, ethylamine and serotin, are used to make chocolate. Theobroma Cacao, a tree native to the tropical climate of South America, is considered sacred by Mayan and Aztec tribes. Cocoa beans themselves are a great “superfood”, as they are rich in antioxidants and other nutrients. Cocoa beans produced by organic farmers in Peru contain 3 more antioxidants than green tea. Cocoa beans are a rich source of minerals. Hand-picked as pods, the highest quality green beans are selected and fermented to reduce the natural bitterness.
How to cook cocoa (for one cup):
- Crush about 10 g. cocoa mass
- Bring the water to the boil and add the cocoa mass
- Mix by hand or with an electric mixer until a smooth consistency is obtained
- If the cocoa lacks sweetness, it can be flavoured with vegetable milk or a sweetener of your choice
