Probably not everyone has heard of bulgur. This is broken durum wheat, which is an excellent alternative to products made from refined wheat. However, it is not only a pragmatic but also a nutritious alternative: bulgur is a source of several vitamins and minerals and also boasts a high fibre content. Prepared bulgur groats have a nutty flavour, take longer to chew, are more nutritious than rice or couscous, and are higher in dietary fibre, protein, vitamins and minerals: they are high in calcium, phosphorus and iron.
Pour boiling water over the rinsed groats (1 glass of groats requires 1½ glasses of hot water) and, once boiling, simmer for 10-12 minutes.
