This soy sauce is made with soybeans, koji (fermentation starter), shochu (rice-based sake distillate) and sea salt. Its main objective is to balance the flavour of the sauce so that all five elements of flavour are revealed. This happens during a 9-month fermentation.
It is a great and affordable gluten-free sauce that takes both oriental and European dishes to a new level. Use it in marinades, dressings, (miso) soups and sauces.
